Quick fun way to make a poached egg that is also eggs sunny side up!! First..I use a heat resist rubber ladle. Bought this thing at William Sonoma and love how it works. You boil your water with just a little white vinegar in the water. For a runny yolk center I cook mine at 3 minutes and remove. I just set the poached egg on a paper towel to dry it off.
Then it's plate time. Look at that beauty! by using the ladle..you get a sunny side up version of a poached egg. This sooo works for eggs Benedict or just on its own with toast, sausage or bacon. Just a pinch of salt and pepper..and it's ready to eat!
Like I said..if you cook this for 3 minutes you get this. If you want it a little more hard boiled..Go for 3 and a half to 4 minutes..but no longer than that. A lot of people prefer poached eggs as a healthier way to cook them..I agree with that. Getting your poached egg to look sunny side up is a bonus..and that great egg taste does shine through!! Try it!!
