Here comes that cold weather so foodies start thinking about what “cold weather” dishes to make for their family..makes sense right. Soups, casseroles, roasts..all that. Today I’m sharing how I make my meatloaf. It has gotten to the point where my wife, Elaine, won’t make it..she likes mine so much..LOL. I go ground pork and beef..and instead of ketchup I use BBQ sauce. Some of my favorite riffs from fellow foodies do things like wrap their meatloaf in bacon, cook it in a smoker grill, and stuff it with sausage or hard boiled eggs..I don’t do any of that..but I can see how those additions would be tasty! Here’s my recipe…..
1 pound ground beef
1 pound ground pork
3 eggs
1 cup italian seasoned bread crumbs
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon sage
For the glaze..brown sugar, BBQ sauce, mustard powder
Pre heat oven to 350 degrees. Mix beef, pork, eggs, italian bread crumbs, salt, pepper, sage into large bowl. Spray Pam or use butter to grease a loaf pan..or I have made this recipe with muffin pans. Then mix all your ingredients together..I use my hands for the best mixing but you can use a large spoon too. Put your meat mixture in the loaf pan..I normally use oil or Pam on a cookie sheet..then turn the loaf pan with the mixture upsidedown onto the cookie sheet. Years ago..I would leave the meatloaf mixture in the loaf pan and cook it that way..but this way..you get a good even heat throughout the meatloaf. While it’s cooking I make the glaze to go on top. You mix brown sugar, BBQ sauce, and mustard powder together and save on the side. Cook the meatloaf at 350 for an hour..pull it out of the oven..glaze with your awesome BBQ glaze..then put back in the oven for 10 to 15 minutes..and it’s MEATLOAF!!! I serve mine almost 100% of the time with buttermilk garlic mash, green beans and carrots..wonderful cold weather meal!! Enjoy!!
