Five weeks into the program and I find myself in need of quick and easy snacks to grab and go. I’ve been snacking on grape tomatoes, celery sticks, berries, cottage cheese, and yogurt while at work, but running to games and practices 4 nights a week has me looking for things easier to grab that do not need to be refrigerated. I’m on the hunt for some good options. I like to cook, but if I don’t have to make them myself I’d appreciate that because time is hard to come by these days.
Concession stands at games don’t offer a lot of options for someone eating low carb. Unfortunately the summer brings a lot of evenings at the ballpark where carry-ins are not allowed. Therefore, I will be eating something quick on the road on the way there or eating a lot of brats, burgers, and hot dogs without buns.
Sweet treats now and then are really nice, especially since we have so many spring and summer celebrations. There are some boxed keto desserts, we’ve tried the brownies and they were pretty good. My health coach, Katrina gave me some tips for baking sweet treats, use almond or coconut flour instead of regular flour and use monkfruit sweetener instead of regular sugar. Katrina also recommended keto friendly ice cream which is pretty good. I found a recipe this weekend for cookie dough. I love cookie dough ice cream so I am going to make my own “blizzard” with the keto ice cream.
The cookie dough I made turned out pretty well. I used Lilly’s sugar free salted caramel chocolate chips…yummy. It has a similar texture to cookie dough, but the taste is quite different. It is still good though. Good enough to accomplish what I’m trying to accomplish. I’ve linked the recipe below.
When I struggle finding time to workout food becomes more important.
This past week I wasn’t able to work out at all, Tuesdays and Fridays are usually the days I don’t have conflicts and can fit in a workout, but this week we had a rescheduled doubleheader for softball Tuesday and Friday I ended up having to take one of my twins to the walk-in for x-rays on her foot and ankle after she fell down the stairs on the playground at school. Luckily nothing was broken.
Because I stuck to healthy eating, even though I didn’t get to work out, I still lost one pound this week. Not as good as previous weeks, but I’ll take it considering the week I had.
