Pistachio Crusted
Salmon
2 King salmon Filets (approx. 6 oz. with the skin on)
1 tsp salt
½ tsp fresh ground black pepper
2 TBL Lemon juice
1 TBL lemon zest
1 TBL Stone ground mustard
1 TBL honey
¼ cup shelled pistachio nuts, chopped
2 TBL panko bread crumbs
1 TBL olive oil
1.Preheat oven to 375 degrees F
2.Rinse salmon and pat dry. Place salmon on a
parchment lines baking sheet and season with salt and pepper.
3.In a small bowl combine lemon juice, lemon zest,
mustard and honey. Spread the mixture evenly over the fish.
4.Coarsely chop the pistachios and combine with
the panko and olive oil. Place the mixture over the salmon pressing lightly to
adhere.
5.Bake for 15-20 minutes until the salmon is
cooked through to a temperature of 135. Allow salmon to rest 5 minutes before
serving it will continue to cook once removed from the oven, final resting
temperature should be 145 degrees.
Serve with grilled asparagus and rice pilaf.
