Seems like ideas for good soups are all around us..and soon we'll have the colder Wisconsin weather to go with it! We're just finishing up on garden goodies like tomatoes. I told my wife that cherry and roma tomatoes ruled this year! Great for salads, tacos, and no kidding..soups!! Tomato soup goes great with chilly days and nights..and remember that you can go in several flavor directions with tomatoes. One way is making a mexican soup. I've seen several recipes that use basics that you use for making nachos, guacamole, tacos, and enchiladas..and then turning that into soup instead.
My wife, Elaine,made this deelish tomato-based soup starting with straight up tomato juice..and then seasoning like you would any mexican dish. Also on top..sure..go nuts with ingredients like cilantro, chips, sour cream. The sour cream works great if you want to chill out the spicy ingredients like jalapenos.
